Most times we want something quick and palatable. The plantain and egg frittta is a life saver. Let’s take a quick look at what went down in our kitchen!!!!
- Ripe plantain (2)
- Eggs (4)
- Peppers, onions, and tomatoes (optional but in little quantities and chopped)
- Salt and seasoning
- Oil (for frying)
Fry your plantains
Add pepper, tomatoes and onion including salt and seasoning into the eggs and mix thoroughly.
Get a large fry pan and add 3 tbsp of oil. Then heat your pan then pour half of your egg into the pan and let it spread evenly. Low the heat and add plantains to the egg(place it like a puzzle ) pour eggs over plaintain and repeat (the puzzle) cover fry pan and let eggs steam under low heat.
Immediately the eggs are done on the top, take a plate or a flat board and cover the pan, turn your pan onto the flat surface like an upside down cake, then gently slide the side facing down into the pan and let it slowly cook till it’s done. Repeat the turning process and let it cool off. Voila!!! Plantain frittata is ready.
