Moimoi Roll Up

Guess what can be rolled up like a Swiss roll? you are correct… moi moi can be rolled up. Moi moi is a steamed Nigerian dish made out of beans. This time we decided to take it up some notches by baking and rolling it. Without further ado, let get to the making of this dish.

Ingredients

  • 3 cups black eye beans
  • 1 cup of palm oil or vegetable oil (1/2 cup olive oil can be used as a substitute)
  • 2 habanero/ scotch bonnet pepper
  • 1 large red onion
  • 1 large red bell pepper
  • Salt and seasoning (to taste)
  • 4 hard boiled eggs (cut into small dices)
  • 3 unboiled eggs

Utensils

  • Blender
  • Flat baking pan
  • Parchment paper
  • Hand mixer

∗Boiled fish and corned beef can be used in place of eggs∗

Steps

∗ Pour your beans in a large bowl and fill with lukewarm water above bean level.

∗ Peel beans after 5 minutes, peel till the bean skin has vanished.

∗ Once the beans has been peeled, add 3 handful of beans with half of an onion, 1 habanero pepper, half of the bell pepper with 1/2 cup of water in a blender and use the “ice crush” menu to blend till its smooth.

∗ Repeat previous step with remaining ingredients.

∗ Preheat oven at a temperature of 355 degrees.

∗ In a large bowl, pour your blended mixture, whisk by hand vigorously for 30 minutes or with a hand mixer on high for 10 minutes.

∗ Add oil, salt and seasoning (if you are using corned beef or boiled fish this is the time you add), add unboiled eggs and whisk for 5 minutes.

∗ Lay parchment paper in your baking pan, add 2 cups of your mixture and flatten out.

∗ Add boiled eggs evenly on the surface.

∗ Bake for 35 minutes or until cakey.

∗ Remove from oven.

∗ Grab the parchment paper out of the pan and place on a flat surface, roll the moi moi like a log of wood.


∗ Set aside till it’s cold.

∗ Ready to serve with necessary condiments.
