Summer stir-fry rice

1/2 cup shredded carrot

1 medium size diced red bell pepper

1 small diced white onion

1 small diced yellow bell pepper

1 diced habanero pepper

1 egg

1 tsp salt

1 stock cube

3 tbs olive oil

2 cups cooked rice

METHOD

In a pan, heat oil

Add egg and stir

Add diced peppers, onion, and carrot

Stir and let it cook for 2 mins

Add salt and stock cube

Add cooked rice (stir simultaneously)

Add 1/2 cup of water

Stir and cook till water dries

Rice is ready!!! Serve with necessary condiments
