Hello foodies, I am sorry for the unannounced break I took, believe me if i say it was for the welfare of our stomachs(lol) , well I’m back with much more recipes and I promise to keep everyone updated! This is a perfect breakfast piece, having this with a cup of tea or coffee in the morning would keep you going. It is definitely filling. The main; if you love plantain, you’d definitely want to try out this recipe.
Without further ado, let’s bake !!!
What you’ll need
1 ripe plantain
1 cup oats
4 eggs
1/2 cup oil
2-2 1/2 cups sugar
2-3 cups flour
Cinnamon
Sugar
How do you create this magical loaf
Preheat your oven (350°F).
Cut a thin vertical piece off plantain and save.
In a bowl mash plantain, add eggs, oil, and sugar and lightly beat.
As you beat, gently add flour into the mix, beat on medium for 5 mins.
Now add oats to the batter and lightly fold with a spatula.
For the cinnamon sugar plantain
Add some cinnamon and sugar in a small bowl and mix together.
Now pour over your plantain and rub gently.
Bake
In a loaf pan…lay with parchment paper and grease.
Pour in your batter and evenly spread it out!
Top off with cinnamon sugar plantain
Bake for 30-35 mins.
Cool on a rack before serving!
